Breakfast cookies
I am in love with these healthy breakfast cookies because they help make mornings simple and delicious. They are loaded with natural ingredients to get your day off to a healthy start. Whether you are running late to work or rushing your kids off to school, these are the perfect breakfast on- the -go. As an added bonus, these cookies are egg, dairy and guilt free. Enjoy!
INGREDIENTS
1.5 cups of grated carrots
1/4 tsp ginger
1/4 tsp cloves
1 tsp cinnamon
1/2 tsp sea salt
1/4 cup golden raisins
1 cup gluten-free large oats
1/2 cup coconut oil melted
1/2c maple syrup (a bit more if you like them sweeter)
1 tsp baking powder
1 cup whole wheat flour
1 cup coarsely chopped walnuts or pecans.
DIRECTIONS
• Preheat oven to 375 degrees Fahrenheit.
• In a medium bowl, combine oats, flour, spices, carrots, baking powder and salt.
• In a separate bowl combine coconut oil and maple syrup.
• Combine the mixtures in both bowls and mix together.
Tip: I like to use a 1/4 cup measuring cup and scoop out the mixture. Then compact them in between my hands, place on a cookie sheet and press down slightly.
• Bake 13-17 minutes (all oven temperatures vary).
• Cool at least 10 minutes before eating.
