Best Ever Ginger Molasses Cookies

These Best Ever Ginger Molasses Cookies are exactly what the name suggests. They are slightly crispy on the outside, soft and chewy on the inside and the sprinkled sugar on top adds a sweet crunch!  This recipe is perfectly spiced with warm spices like cinnamon, ginger and cloves. They are so quick and easy to make, making them the perfect cookie for the holidays and all throughout the winter season.  Once you have made these gems they will become one of your holiday favorites, trust me. 


Ingredients: 

¾ cup butter

1 cup white sugar

1 egg

¼ cup molasses

2 ¼ cups flour 

1 tsp baking soda 

¾ tsp cinnamon 

2 tsp ginger

½ tsp cloves

1/4 tsp salt

additional sugar for rolling


Instructions:

  1. Add butter to a bowl and cream until soft and creamy. Add the sugar and beat a couple of minutes. Add in the egg and molasses and continue to combine and mix. 

  1. In a separate bowl combine flour, baking soda, ginger, cinnamon, salt and cloves. Whisk together. Then gently add to the creamed mixture.  

  2. Remove dough and shape into 1.5 to 2 inch balls and roll each ball in white sugar to coat. 

  3. Place them on a cookie sheet and press down slightly. Bake at 350 degrees for 9-11 minutes until they are golden and crackled. 

  4. When they are done remove cookies from the oven and let them cool on the baking sheet for about 5 minutes until cooled. This will help them achieve the soft and chewy texture as they continue to bake on the inside while cooling. Do not overbake these cookies.  

  5. Enjoy

Pro Tip: All ovens run at different temperatures so baking times may vary. Be sure to keep an eye on your cookies.( do not over bake)
